Sample Itinerary

Day 1
Arrive in Seville and check in to your hotel. This afternoon a local guide will pick you up at your hotel and take you on guided walking tour through historic Seville. Highlights include the Alcazar, a Moorish-built palace complete with traditional patios, fountains and hand-crafted tile work; the Gothic cathedral whose bell tower affords magnificent panoramic views of the city, and the former Jewish Quarter's winding streets and hidden patios.
Day 1
In the evening a guide-resident knowledgable about Andalucia's food and wine will pick you up at your hotel for a tapas tour. Discover the tapas bars for which Seville is so famous and get up close with the world of Spain's traditional flamenco music. At your first tapas bar stop you will meet a local flamenco guitarist who will tell you about flamenco's history and place in contemporary Gypsy culture in Spain. He will play some flamenco music as he demonstrates the complex rhythms and structure of flamenco. A insider's glimpse into the normally difficult to access world of flamenco. Afterwards you will continue on your tapas tour with the guide. Tapas "bar hopping" normally involves visiting a number of bars during the course of an evening, trying local delicacies and sharing each dish with your companions. Your guide will take you off the tourist trail and into Seville's side streets and hidden plazas, introducing you to the local bars with their buzzing atmosphere and busy barmen. You will also learn about numerous Spanish wines. Taste the local delicacies and soak up the sights, sounds and smells of a true night out in Seville!
Day 2
Breakfast at the hotel. Your guide will pick you up for a full-day Iberian ham tour. Travel through the unique Holm oak-studded countryside called dehesa, where the acorn-fed Iberian pigs are raised. The production of Iberian ham, or jamon iberico, is an example of the ultimate traditional, sustainable, and low-impact agricultural system as the pigs graze on the plants and in the fall, on the fallen acorns from the oaks. You and your guide will accompany a local expert on a visit to a farm to see how the native pigs are reared, ranging free, feeding on acorns. After sampling the mouth-watering ham at the farm, continue on to the town of Aracena to enjoy a lunch that truly highlights what "eating local" should be: savor the finest local ham, cheese, mushrooms, pork, and produce. Return to Seville.
Day 3
Breakfast at the hotel. Your guide will pick you up at the hotel for day out of Sevilla in the beautiful city of Jerez de la Frontera, the cradle of flamenco music and of sherry. Jerez is located an hour south of Seville in Cadiz province, nestled between the Atlantic coastline and the sierra foothills and surrounded by vineyards. Jerez is the capital of Spain's sherry producing region, and an amazing undiscovered city, also famous for the stunning Spanish horses raised and trained there. Start your visit at a private family owned winery to see how sherry is aged and sample elite sherries of VOS quality (Very Old Sherry) fino, amontillado, oloroso, palo cortado, and Pedro Ximenez.
Day 3
Afterwards, you'll have a traditional lunch in the center of Jerez. Return to Sevilla in the afternoon. Free time before dinner. This evening, your local food and wine guide will accompany you to dinner at El Rinconcillo, Sevilla's oldest restaurant-bar, where traditional tapas reign supreme. Accompanying the tapas will be a wine tasting of Spanish wines with an emphasis on wines from southern Spain.
Day 4
Breakfast at the hotel. Depart Seville in the morning and travel to the picturesque town of Vejer de la Frontera - a pueblo blanco of Moorish origin near the Atlantic Costa de la Luz. Check into your hotel located on one's of Spain's most charming squares. Before leaving for the coast have a cafe cortado or a glass of wine on the Plaza de Espana outside your charming hotel. Drive down the hill to Barbate, Spain's most famous tuna fishing port. This part of Spain's Atlantic coast is famous for the centuries-old almadraba fishing of tuna, a method inherited from the Moors. Nets are stretched to capture the migrating tuna en route to the Mediterranean. The tuna from Barbate is sold to buyers across the world.
Day 4
You will have lunch consisting of various fresh and cured locally caught tuna dishes in a traditional rustic seafood restaurant. After lunch you will take an easy hike through the Brena Park pine forest before visiting the most beautiful beach in Andalucia. There are impressive Roman ruins near this beach. Enjoy the silky sand dunes and cool Atlantic waters on the beach. The views from the coast here are spectacular, on clear days you can gaze across at Africa! After your hike go back up the hill to Vejer for a special evening in the white village. Explore the winding whitewashed streets and small squares of the old town. Enjoy the views of the Atlantic, the Strait of Gibraltar and the surrounding countryside. Enjoy dinner on your own.
Day 5
Breakfast at the hotel. Today you will have an up-close experience with one of Spain's best known Michelin-starred chefs. Angel Leon of Aponiente Restaurant in El Puerto de Santa Maria has 2 Michelin stars and is known for his innovative cuisine sourced from the sea. Before lunch at Aponiente meet with Angel Leon and visit the local market, meet some of the chef's favorite suppliers, and afterwards go into his kitchen to see how some of his signature dishes are made. Afterwards sit down in the restaurant for lunch with wine. An insider's experience reserved for our clients! After lunch you will visit a Sherry winery in nearby Sanlucar de Barrameda for a tasting of their Manzanilla sherries. Return to Vejer for a tapas route dinner.
Day 6
Breakfast at hotel. Private transfer to Cadiz train station for the train to Madrid or to the Sevilla airport for a flight to Madrid or Barcelona.
