Friuli Venezia Giulia
Friuli is known as one of Italy's foremost wine regions. But its many influences come from around the country and even beyond the boot's borders. Just look at its eclectic cuisine. There's Slavic-accented frico (a young cheese omelet with potatoes and aromatic herbs), Mitteleuropean-influenced muset and brovade (sausage and soured turnips), and Venetian-style risotto and polenta.
Friuli-Venezia Giulia produces Italy's top white wines and some outstanding reds, with more varieties than any other region in Italy.

Day 1: Friuli - Cormons
Private transfer from Venice (hotel or airport) to Cormons, in the heart of Collio area, which produces malvasia, ribolla gialla, pinot bianco, friulano and interesting local reds such as refosco and pignolo. Accommodation will be a country relais, featuring a Michelin star restaurant surrounded by oak trees and vineyards. Dinner at the restaurant. (D)
Day 2: Cooking Class & the Super Whites of the Collio area
Breakfast at the hotel. This morning a private cooking lesson to prepare Girini (hand made pasta) with vegetable ragout, dadolata (venison with vinegar), zucchini flowers and kren sauce made with horseradish. Lunch follows.
Private excursion travelling in the Collio area, to visit two superb wineries with tastings, followed by a farm visit for a tasting of Montasio cheese and Cormons prosciutto, considered by many to be the best in Northern Italy. Overnight in Cormons. (B, L, D)
Day 3: Trieste & Udine
Breakfast at the hotel. Meet your private guide for a walking tour in the Piazza dell'Unita d'Italia, the symbol of Trieste. Lunch at a local trattoria.
Visit the castle and park of Miramare, built in the mid 19th century by Archduke Maximilian of Habsburg.
Transfer to Udine, a town full of art treasures, elegant palaces, and churches from Venetian Republic. Accommodation in a 4 star hotel in the historic centre. (B,L)
Day 4: Cividale del Friuli Wines and San Daniele Ham. Cooking lesson in Udine
Breakfast at the hotel. Travel to San Daniele del Friuli for a walking tour of the medieval city centre, followed by a visit to a Prosciutto factory and a light lunch based on San Daniele prosciutto and typical products.
Afterwards, stop for a visit in the Roman village of Cividale del Friuli for a private guided visit of the wine cellar and a wine tasting. Back to Udine, for a private cooking class preparing frico, cjarsons (ravioli with a sweet or herb-flavoured filling), gnocchi di susine and (plum gnocchi) and the local dessert, gubana: a moist cake filled with nuts, raisins, pine nuts, dried figs, dried prunes, candied citrus fruits, chocolate, grappa, bread crumbs, and butter. Dinner will follow the lesson. Overnight in Udine (B,L,D)
Day 5: Departure
Breakfast at the hotel. Private transfer to Venice.
