Shelburne Farms: Where the Cows Always Come Home

It’s a special time of day, when the cows walk back from the pasture to the dairy to begin their last job of the day — milking. It’s even more special to watch them on the banks of Lake Champlain in Vermont. Tour de Forks has partnered with Shelburne Farms so you can enjoy a three-day cheesemaking experience to learn how Shelburne turns 5,000 lbs of milk into 600 lbs of farmstead cheddar every day. And you'll make traditional French chèvre and mozzarella.

Believe us, when you tour Shelburne Farms in a horse drawn carriage, it’s magical. Learn about vegetable growing and harvesting by Shelburne’s head market gardner and enjoy a lunch full of garden delights. Then walk it off in the pasture learning about the importance of the different grasses from the dairy manager. After all, this is where cheese begins. Meet Brown Swiss cows from the newest arrivals to the happiest seniors. Have a go at milking or just watch how the machines do it. Then it’s all about the cheese. Shelburne’s cheese operations manager shows you the art and science of how Shelburne makes its cheddar. Learn the history of cheese dating back to Mesopotamia with a special cheese tasting. A field trip takes you to the Northwest Kingdom of Vermont where you’ll tour Jasper Hill's cheese caves and learn the art of affinage (cheese aging).

There’s also plenty of time to relax and enjoy the view. You'll stay at the Inn at Shelburne Farms, an 1899 Vanderbilt estate, full of charm and history. The kitchen is farm-to-table and the delicious meals are expertly prepared. Relax in an Adirondack chair on the lawn – with a glass of wine, a special farm cocktail or an award-winning Vermont craft beer, to watch the sunset over the Lake Champlain.
