Saint-Hilaire de Limoux
The "Original" Sparkling Wine
Saint-Hilaire Blanquette de Limoux is sourced from the oldest sparkling wine producing region on the planet! In 1531, Benedictine monks from Saint-Hilaire were producing a still wine made from the Mauzac grape and stumbled upon bottles going through secondary fermentation. The appellation of Blanquette de Limoux was born! Still made in the same, traditional way today, Saint-Hilaire Brut is a wonderful sparkling wine with an affordable price tag.
Ingredients: dried apricots, dried figs, raisins, orange and lemon zest, apples and pears, cinnamon sticks, walnuts and a dessert wine such as a Moscatel Gordo from Spain.
Method: Boil the wine or juice with the finely sliced orange and lemon zest, cinnamon and cloves until it reduces by half. Add the raisins, dried figs, dried apricots and pieces of apple and pear. Simmer for a further 30 minutes until the fruits are tender. Add the walnuts. Serve the fruit slightly warm and enjoy.

The Other Southern France: May 11-18, 2014
This escorted tour will take you through ancient Roman roads, medieval castles and rambling ramparts and includes stops in the country's capital of cassoulet, where you will not only feast on the hearty regional dish, but learn from an expert how to make it. You'll be thrilled by the world's oldest bubbly and delight in a once-in-a-lifetime olive oil tasting and an insider's artisanal anchovy tour. Friuli Venezia Giulia
An independent package in Friuli, which produces Italy's top white wines and some outstanding reds. Its many culinary influences come from around the country and even beyond the boot's borders.
